i have a ipod gen 1 and a 5th gen i got for my bday but on the 1 i jailbreaked and when i started up it says couldnt load IOS!
I guess this is what happens when you take the risk of doing it. I rooted my Android 2.1 and it was update, no issues. I also Soft modded my Nintendo Wii and I now have 42 games (getting 40-50 from a friend soon) and I will be modding a few other consoles too.
I have never jailbreaked an iPod before because I do not own one, but when you do things like this make sure you know what you are doing, sorry I cannot be of much help.

This is a complete lie.First off, there is no 5th generation Ipod. It would never say "Couldnt load IOS" it would either show the recovery mode screen or just be bricked. I jailbroke my 4th generation Ipod and it works just fine.

I jailbroke my iPod touch 3rd gen with iOS 5 with redsnow and my iPad 2 with iOS 5 with limerain. No problems at all. I was also gonna root my phone which is an lg gt540, when it was android 1.6 it was working fine. For 2.1 there were almost no exploits and all the roots were either not working or were breaking some of the phone features. I tried z4root but it was crashing the phone right after startup. When I installed an antivirus z4root was moved to the vault instantly.
I have never had any problem with jailbreaking. Also like dj1437 says it whouldent say couldent load IOS you probably did it wrong.

I have also Jailbreaked loads of things, from PSP'S to Tablets and have had no problems. If you do it right you should have no problems, But like all things there is a RISK that you will render it useless.
